Almond & Coconut Porridge

If you love coconut, This will taste of sweet summer holidays!

Ingredients


1/2 cup coconut milk or any milk
4 Tbsp ground almonds
4 Tbsp desiccated coconut or coconut flour
1 tsp vanilla
1-2 Tbsp sweetener of your choice (or none)
To serve: (optional)
1 Tbsp nut butter or tahini ( for creaminess)
Berries
Milled seeds ( flax, sunflower, pumpkin , sesame seeds)
cocoa nibs
Pecans, walnuts, hazelnuts, etc.
Your-own choice of toppings

Instructions

Boil milk and add almond, coconut & vanilla to the pan, cook on medium to high heat until reach your preferred thickness.

It will thicken when it cools down.

Chef recommendations:

If you don’t like the flavour of desiccated coconut, replace it with coconut flour instead.

Add chia seeds or flaxseed to the recipe for a more compact & porridge like consistency.

A dash of cinnamon or cloves tastes delicious with almond & coconut flavours.
