Chocolate Peach Chia Pudding Cups
Ingredients
1/2 cup of macadamia nut milk
2 tbsp chia seeds
1 tbsp of hot cocoa powder
1/4 cup of heavy whipping cream
3 tbsp of mascarpone
1 tbsp of peach jelly powder
2 chocolate chipped cookies
Instructions
Mix half a cup of macadamia nut milk with 2 tbsp chia seeds, 1 tbsp of hot cocoa powder.
Mix well and let sit for a few minutes. Then pour into 2 small jars. Let it set in the fridge for an hour.
For the peach fluff layer, whip approximately 1/4 cup of heavy whipping cream until soft peaks form. Then add 3 tbsp of mascarpone and 1 tbsp of peach jelly powder. Mix until well combined and pipe on top of chia seed layer.
Top it with chocolate chipped cookie. When ready to enjoy, top it with melted milk chocolate.
